Specifically, when near-infrared light irradiates the fruit, sugar molecules absorb photon energy matching their vibrational frequencies, leading to the absorption of light at specific wavelengths. By measuring the intensity and position of these absorbed lights, a relationship model with fruit sugar content can be established.
